Floral flavor is on the menu this spring! Here’s how to mix up your ice cream game with some scoop-tastic flower pairings!

Ice cream isn’t just a treat for the hot summer afternoons – it’s also a great way to welcome spring! Especially when you pair it with spring’s favorite flowers. It might sound odd at first but floral notes make for excellent additions to sweet treats! In fact, did you know that many cultures use edible flowers in their cooking? Ancient Romans added violet and rose petals to their salads, while the Mesoamericans and ancient Chinese used edible flowers in both dishes and medicine. 

In the spirit of spring, we’re diving into some of our top flower and ice cream combinations to refresh your taste buds!

Lavender Honey Ice Cream

Lavender has a rich culinary history that spans the Asian and European continents. Starting with its popularity in Ancient Egyptian and Roman kitchens, Lavender eventually found its way into medieval Europe through sugar and vinegar infusions. Its delicate floral notes are super calming and pair well with the soft, fruity sweetness of honey. Try a bite and feel all your worries melt away like ice cream on a hot afternoon. If you’re looking for a stress-free spring, this is the flower and ice cream combination for you!

Rose Petal Raspberry Ice cream

If you’ve ever tried Turkish Delight, you’ll understand the allure of rose on your palate! Now popular as a universal symbol of love, this flower has been used for centuries in Mediterranean culinary traditions. Its use can be traced back to the Persian empire, which steamed rose petals to extract oil and left rose-infused water as a by-product! Our rosy recommendation is to combine rose and raspberries for a perfect blend of sweet and tart ice cream, which you can enjoy in a few ways.

For a subtler treat, try raspberry ice cream sprinkled with real rose petals mixed right in. If you’re feeling a bit more floral, go for rose-petal-infused ice cream with juicy raspberries on top!

Jasmine Green Tea Ice Cream

This flavor combination is super popular across East and Southeast Asia – and for good reason! This spring combination is like a breath of fresh air, with cool notes that evoke spring’s beauty. The simplest way to enjoy this classy combination is with a scoop of green tea ice cream drizzled with a sweet, jasmine-infused syrup. It’s a harmony of flavors where the floral jasmine notes and sweetness of the syrup balance perfectly with green tea’s earthy flavor. For something stronger, however, you’ll want a fully jasmine green tea-infused ice cream. Either way, both options offer a perfect balance between the fragrant jasmine and the earthy tones of green tea!

Elderflower & Lemon Ice Cream

Citrus lovers can definitely unite behind this mellow mixture! Elderflower is a delicate white flower with a flavor profile that brings a refreshing brightness to every scoop, which pairs perfectly with zesty notes like lemon. The first recorded recipe with elderflowers is dated almost 1,900 years ago. Across Europe and South Asia you can find the Elderflower infused in alcohol, jams and even fried in fritters!

Somewhat reminiscent of a robust earl gray tea, you can try this combination with lemon sorbet topped with elderflower syrup – but for a stronger bite, we recommend having both flavors infused in a full ice cream scoop. Both capture the spirit of spring, blending hinted floral notes with the crisp, clean taste of lemon – perfect for the sunny days to come!

Saffron & Pistachio Ice Cream

Well-known as the most expensive spice on earth, saffron is derived from dried ‘threads’ hand-harvested from the saffron crocus flower. Each flower holds only three threads, and a whopping 150 flowers are needed for just one gram of saffron! This spice lends a gorgeous golden hue to any dish, and is earthy with bittersweet overtones. This flavor profile makes it perfect to pair with the nutty pistachios.

Saffron and Pistachio are a true indulgent flavor combination reserved for special occasions. We recommend scooping some sticky Turkish-style pistachio ice cream, like dondurma, and adding a dash of saffron spice powder as garnish. If you’re feeling adventurous this spring, you should look for our favorite Persian ice cream called bastani sonnati. It is a creamy treat flavored with saffron, pistachio and rose water!

Snow might take on different meanings as you grow up, but it’ll always spark joy in your inner kid! In the spirit of this fun, we’re here to tell you that you don’t just have to play with it – you can totally turn snow into the world’s favorite treat! This is the ice cream expert’s guide to making ice cream out of snow.

 

Snow Ice Cream

Remember the joy of snow days, when school closed and you found fun and cold adventures with friends and family? Snow might take on different meanings as you grow up, but it’ll always spark joy in your inner kid!

In the spirit of this fun, we’re here to tell you that you don’t just have to play with it – you can totally turn snow into the world’s favorite treat! This is the ice cream expert’s guide to making ice cream out of snow.

What snow is safe to eat?

Before you can even start making your wintry treat, we need to talk about where you’re harvesting your snow from! Here are a few basic rules to follow when collecting snow that’s safe to consume.

  1. Never, EVER eat snow that’s been freshly plowed! It’s likely to have bits of asphalt, chemical salts and dirt mixed in, which definitely won’t be pleasant additions to your dessert.
  2. Thinking of getting your snow off your lawn or backyard? You might want to avoid it if you use pesticides on your foliage for obvious reasons! While the trace amounts of pesticide in garden snow could be pretty negligible, it’s best to err on the safe side!
 

Try collecting snow in a clean bowl as it falls – but maybe not immediately when it starts coming down! Atmospheric scientists say that the first wave of snowfall often traps and soaks up pollutants in the air and can even mix in with fine dirt particles if there’s heavy wind! If you want to be super safe, start collecting your snow about an hour or two in. 

Ingredients:

  • 1 cup of milk (any kind)
  • 1/3 cup granulated white sugar
  • 1 teaspoon vanilla extract
  • 1 pinch fine sea salt
  • 8 cups of clean snow or shaved ice

Optional topping: sprinkles!

 

Pink snow ice cream

Instructions:

  1. Begin by placing a large bowl in the freezer before you begin. Cold bowls help keep your snow ice cream from melting quickly.
  2. Once all of your sugar, vanilla extract, salt and milk are ready, take your large bowl out of the freezer. 
  3. Now, in the large bowl, whisk together milk, sugar, vanilla and salt until well combined.
  4. Next, head outside and scoop up some clean, fresh snow! 
  5. Immediately after adding the snow with the other ingredients, stir! Do this until it looks as close to ice cream as possible. 
  6. Time to eat! Dive in right away before your homemade sweet treat melts away! 
 

Optional: Elevate your snow ice cream with some sprinkles of your choice. If you’re looking for a sparkly topping to stay on the frosty theme, why not go for some edible glitter or shiny sprinkles?

Recipes like this are the best way to celebrate the nostalgic joy of this season. With every homemade snowy scoop, you can savor the magic of winter this recipe captures- winter has never been so sweet!

Can you feel the magic in the air as October sweeps in with a crisp breeze and colorful leaves? It’s that time of the year when pumpkins reign supreme, gracing our lattes, pies, and even our ice cream! What ties these fall treats together? You guessed it – the beloved Pumpkin Spice syrup. In this delightful DIY adventure, MOIC is going to show you how to create this liquid gold at home.

Sure, you can easily pick up a bottle of pumpkin spice syrup at your local store, but where’s the fun in that? Crafting your own syrup allows you to tailor the flavors to your liking and enjoy a sense of accomplishment at the end. Plus, you get to impress friends and family with your new syrup making skills! And let’s not forget, it’s an ice cream’s best friend – just imagine drizzling it over a scoop of vanilla bean goodness. Before we embark on our pumpkin spice adventure, make sure you have these 6 ingredients close by:
  • 2/3 cup of light brown sugar
  • 1/2 cup of granulated sugar 
  • 1.5 tablespoon of pumpkin pie spice 
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of extra cinnamon (Optional) 
  • 1/3 cup of pumpkin puree.
Now, let’s dive into the recipe itself. It’s so easy, anyone can master it!

  1. Begin by placing 1 cup of water in a small saucepan. Add the brown and granulated sugars, pumpkin pie spice, and vanilla extract. 
  2. Place the saucepan over medium-high heat, and bring the mixture to a simmer. Don’t forget to whisk occasionally! We want that sugar to dissolve and the spices to awaken, infusing their delightful aroma into the syrup – and your home! Let it simmer for about 2 minutes, ensuring all the flavors are blended together
  3. Next, reduce the heat to low and whisk in the pumpkin puree until your concoction is smooth and oh-so-creamy. Keep a watchful eye; we don’t want it to boil or burn. 
  4. As soon as that creamy blend is achieved, promptly remove it from the heat. A smooth syrup is like a cool breeze on a hot day, and that’s exactly what we’re aiming for. 
  5. The final touch of finesse! Strain your magical mixture through a fine mesh strainer and let it flow into a storage container. Once it cools down, give it a cozy lid, and pop it in the fridge! It’s like preserving a slice of autumn for whenever you need a sweet escape.
The best multi-purpose DIY project For the next few weeks of fall, this syrup is going to be your best friend when it comes to injecting some seasonal notes into your treats! It goes great as a waffle topping, a spicy addition to your coffee or even something to zhuzh up your next baking project – but here at Museum of Ice Cream, we love it best over some creamy vanilla ice cream! We’ve celebrated a love for all things cool, soft and sweet for hundreds of years in the States, and the land of the free has always been the beating heart of ice cream innovation!

This 4th of July, we wanted to try a recipe that celebrates the brave pioneers that helped build our home and the rich ice cream landscape that we enjoy today. In honor of these American trailblazers, we present the Gingerbread Apple Pie à la Mode!

Ingredients

Gingerbread crumble

  • 1 tablespoon ground allspice
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • ⅓ tablespoon ground cloves
  • ⅓ tablespoon ground nutmeg
  • 1 ⅓ blocks unsalted butter
  • 1 cup all purpose flour
  • 1 cup rolled oats
  • ½ cup brown sugar
  • ½ teaspoon cooking salt

Apple pie

  • 6 medium-sized apples, peeled, cored and sliced
  • ¾ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • Store-bought pie pastry
  • Philadelphia-style vanilla ice cream

Crafting the gingerbread crumble

  1. While the butter is still cold, dice it into chunks and empty it into a large mixing bowl. Pour in the spices, brown sugar, oats, salt and flour, and get to mixing!
  2. Once you’ve mixed everything together and all butter pieces are coated, you can start to mash the butter into the dry ingredients. You can use a pinching, kneading motion with your fingers, and you’ll know it’s done when you have no visible pieces of butter and the mixture resembles crumbly wet sand!

Apple pie, assemble!

  1. Butter a 9-inch pie plate and gently drape the store-bought pie pastry over it. Don’t forget to roll out the pastry dough if the packaging instructions require it! Gently press the dough into the shape of the pie plate, and use kitchen shears to trim any excess overhang.
  2. Chuck the cored and sliced apples into a large mixing bowl along with the brown sugar, flour and cinnamon and mix well, ensuring that all the apple slices are coated with the dry ingredients. Pour the apples into the pie crust, and refrigerate for at least an hour before baking.
  3. Preheat the oven to 400°F. Bake the pie at 400°F for 20 minutes, then lower the temperature to 350°F and bake for another hour. If your crumble crust starts to get a lil too brown, pop some aluminum foil over it to prevent further browning.
  4. Once the pie is bubbling and a beautiful golden brown, remove it from the oven and let it rest for about 15 minutes.

Now it’s time to assemble your masterpiece! To serve, you can simply plate up a slice of freshly baked apple pie with a generous helping of sumptuous Philly-style vanilla ice cream. Feel free to add any toppings of choice – caramel drizzle, slices of fresh apple, peanuts; it’s entirely up to you!

This delightfully familiar dessert features a few unique components that come together to become something greater than its parts – just like the States!

Have you ever heard the phrase “as American as apple pie”? When talking about quintessential American desserts, odds are that apple pie will be at the top of the list! It may come as a surprise to learn that apple pie didn’t originate in the US – and neither did apples! European varieties were brought from the old world, along with traditional recipes like English apple pie, which at the time included figs, pears and raisins.

The modern ‘American’ apple pie is a lot simpler, but we’ve opted to level it up with a gingerbread crumble inspired by an extraordinary American (who’s soon set to grace the new $20 bill); Harriet Tubman! Apart from being a powerful force in the civil rights movement, Harriet Tubman trained as a professional chef and developed recipes that included plenty of sweet treats that drew from a variety of culinary cultures.  During the Civil War, Tubman famously doubled as both a nurse and a spy, but she also opened an eatery in Beaufort where she sold root beer pies and gingerbread to Union soldiers.

The last component of our pie is absolutely essential because no dessert pie in MOIC is complete without a healthy dollop of ice cream! For this Patriot Pie’s perfect scoop, we’re taking a page from the cookbook of the revolutionary chef Augustus Jackson, who is hailed as the father of modern ice cream! His innovations revolutionized the way ice cream was commercially produced, which helped democratize the consumption of our favorite frosty treat at a time when ice cream was a luxury product. One of his notable contributions was a recipe for eggless ice cream, which birthed the Philadelphia-style ice cream that we still love scooping today!
